Processing Cow Milk
This newer barn on the farm shows the type of structure that Jonas Coonrad needed for his several hundred cows. Coonrad milked his cows and made cheese in both the winter and summer, despite the summer heat. In order to produce the best quality and quantities of cheese year-round, factories needed to develop ways to refrigerate milk and cheese. At some factories, workers refrigerated their milk by passing cool water through boxes of ice that surrounded the milk.
